Umm, I don't think it really matters, you've just got to be able to hit them hard, so a blader probably isn't the best. However, Ive not got round to thieving, so I'm probably not the best to help.

you can use the weapon you normally use dude, the job has no effect on your weapon.
a STR can cause high physical damage
an INT can cause high magical damage, so in the end they both cause damage, its just different type of damage that gets the kill.
use whatever weapon you have trained with. why would you use a blade if you have no blade skills? why would you use a spear if you are str? you use a glavie. so basically you use the weapon you have skills on.
a thief is as usefull as a trader or a hunter, they all make money, and if you wonder how you can make money as a hunter, then i tell you how. first you kill a theif, then you disconnect, you reconnect again, you put your theif suit on and now you are a thief, pick up the stuff of the person that you killed when you werea hunter and now you make money.

errr...code, i dont think thats what hes asking....
u probably want to use an int spear and use nukes to do high damage, or use a pure str glavie, both are the higher end of the two weapons for each catagory
blade will get higher defence, but u may not kill the run animal in time before your 6 feet under
sword may be an alternate for spear, cuz its still a nuking weapon with SLIGHTLY less magical dmg, and the shield helps between nukes-now that i think of it, sword may be better for the pvp thieving since all the hunters will come at u trying to plant grass in your ass
so go pure str fire glavie, w/ a flying dragon and phantom walk or whatever to catch runaways
or nuke them and to high damage and stuff
but its really your preference...i would prefer sword+shield for int or glavie for str
but thats just me, after all its your char

Bladers, where people may think they are bad for thiefing, arnt really.
You go to rob a trader that is around your lvl, and he has a hunter with him. If you are spear, you will maybe kill the animal, but b4 u can pick it up, you are quickly dead. A blade, being the greatest tanker, is able to kill the hunter, kill the trader, and then kill the animal.
Galvie may be the best choice tho.

hm... ya, that just clicked a light bulb in my head!
ok, maybe the blade is the best thief build, mainly cuz it can tank the hunters+traders+npc thieves....but i dont know, i still have my bets on the nuker or the glavie
