Parry is the opposite of hit ratio. When an incoming blow hits you, the difference between your parry and your opponent's hit ratio (randomized of course) determines where on the range it will do.
So if my damage is 1250-1730, a higher hit ratio would result in me hitting more towards 1730, and a higher parry on whoever I'm hitting would result in a hit towards 1250.
If you're short on SP, leave it to later levels, as it won't do all that much at lower levels.
