To take full advantage of any warrior build you should take all weapons. If you cannot afford/ don't want to farm all 3 weapons, then take just the "essential" skills: all two handed skills, double and sudden twist from dual axes, shield trash and crush from one handed sword. Cleric is better overally, it greatly improves your tanking abilities, it's said by a lot of people to be the best sub for warrior. Warlock on the other hand increases more your offensive abilities (your damage) and enables you to "control" your enemies. Both are strong builds, for hunting in general I say cleric is better. For group pvping cleric is better also. For most 1vs1 pvp situations warlock is better.

Sub - Cleric/Bard ?
The best warlock build for pvping is by far cleric. The best one for hunting is by far bard. Both are pretty good at group pvping, though cleric has more buffs and has ressing skills. It would depend on what you prefer and if you like more bard skills or cleric skills. I'd say you'd not get disappointed if you choose any of these two.
